Salmon with Vegetables
Salmon is really good when fried. Below you can find a simple
recipe with seasoned carrots and zucchini as a side dish. It
is also a good idea to have some boiled potatoes, too.
Ingredients
For
two:
300
g salmon
olive oil
sea salt
white pepper
lemon juice
For the vegetable side dish:
2 carrots
1/2 zucchini
1-2 tbsp butter
olive oil
1/2 tsp vegetable stock flour
1/4 tsp white pepper
1/4 tsp basil
Instructions
1. Cut the salmon into two fillets.
2. Heat the oil and put the salmon in
the pan. Add salt, white pepper and lemon juice.
3. Cover and let the fish cook for 15
minutes or until it is done.
For the vegetable side dish:
1. Cut the carrots and zucchini into long, thin strips. Use
a potato peeling knife, for example.
2. Melt
the butter in a pan.
3. Add the vegetables and some olive
oil. Season with vegetable stock flour, white pepper and basil.
4. Stir and let the vegetables cook for
3-5 minutes. Do not cook longer, since the vegetables should
be eaten al dente.
5. Serve with the fried salmon.
