Red Curry with Green Pepper


This recipe combines beef, capsicum, red curry paste and a lot green peppers. You might think there are too many peppers in this dish, but actually the fresh green peppers are not that strong. You can find them in Asian foodstores.

Ingredients

For two or three:

300 g beef fillet, cut into thin pieces
1 tbsp light soy sauce
1/2 tsp black pepper
4 tbsp oil
2 tbsp red curry paste
1 garlic clove, chopped
1 red capsicum
100 g fresh green peppers
2 tbsp fish sauce
1 tbsp sugar

Instructions

1. Cut the meat into thin pieces and combine with light soy sauce and pepper. Cut the capsicum into long pieces. Cut the green peppers into 3 cm pieces.

2. Heat the oil in a pan and fry the red curry paste for a moment.

3. Add the meat and garlic and fry until the meat is no longer red.

4. Add the coconut milk and bring to boil.

5. Add the green peppers, capsicum, sugar and fish sauce. Stir and add a drop of water if needed.

6. Fry for 3-4 minutes until the capsicums are no longer hard but not completely soft either.

7. Serve with rice.
