Green Coconut Curry
This is an easy dish to prepare if you have the right ingredients.
In Helsinki you can find green curry paste in almost all larger
grocery stores. The Thai eggplants may not be so easy to find,
but try searching from Asian foodstores.
Ingredients
For
two or three:
300 g beef fillet, cut into thin pieces
10-15 small Thai eggplants
2 tbsp oil
2 tbsp green curry paste
1 garlic clove, chopped
400 g coconut milk
1
red and 1 green chili
2 tbsp fish sauce
3 tbsp dark sugar
1/2 tsp galanga paste (optional)
1/2 tsp lemon grass paste (optional)
20-30 basil leaves
salt
Instructions
1. Cut
the meat into thin pieces and sprinkle some salt on them. Cut
the eggplant into 2-3 cm chunks and put them into water. Split
the chilies and remove the seeds. Wash the basil.

Heat the oil in a pan and fry the green curry paste for a moment.

Add the meat and garlic and fry until the meat is no longer
red.

Add the coconut milk and bring to boil.

Add the eggplants, fish sauce, dark sugar and chilies. (In the
green curry paste you already have galanga and lemon grass,
but for some extra taste you can add some of both at this point,
if you want.)

Cook for 3-5 minutes until the eggplants are no longer hard
but not completely soft either.
7.
Sprinkle some basil leaves on top of the sauce.
8.
Serve with rice.
