Rucola Pasta
This pasta is particularly tasty on a hot summer day. In the
winter time this brings back memories of summer (although during
the darkest months it is not recommended to eat a lot of rucola
due to large concentration of nitrates.) This dish goes well
with red wine or mineral water with gas.
Ingredients
For
two:
3
tomatoes
2 cloves of garlic
rucola (a large handful)
2 tbsp parmesan
1/2 tbsp lemon juice
6-7 black olives
3-4 tbsp olive oil
spaghetti
Instructions
1. Wash the tomatoes and rucola.
2. Chop the tomatoes, rucola and garlic.
3. Mix the tomatoes, rucola, garlic,
parmesan, lemon juice, olives, and olive oil.
4. Let the ingredients draw taste from
each other as you cook the pasta.
5. When tha pasta is cooked, pour in
the ingredients and mix well. (You can do this quickly in the
pan on top of the hot stove in order not to let the pasta turn
cold.)
6. Serve warm.
