Vindaloo
Hot meat dish with plenty of chilli and vinegar.
Ingredients
For
three:
1/2
teaspoons of fenugreek seeds
1 tsp mustard seeds, crushed
1 teaspoon turmeric
3 tablespoons tomato paste
3 tablespoons of malt vinegar
1/2 teaspoon of sugar
2 tablespoons of vindaloo currypaste
2 dried chillis
2.5 dl water
2 tablespoons vegetable oil
1.5 onions, chopped
400 g pork, chopped into 2 cm chunks
salt
Instructions
1. Combine the first nine substances in a container.

Heat the oil in the frying pan. Add the onion. Fry until the
onion is golden brown.
3.
Add the meat and fry until the surface has changed its colour.
4.
Add the remaining ingredients. Heat to boiling point.
5.
Lower the heat and simmer under a lid for two hours.
6.
Stir occasionally. If needed, add water and salt according to
taste.
7.
Serve with rice.
Tip:
A simple salad of red onion, tomato and fresh coriander goes
well with this dish.
