Saag Aloo
Saag is spinach and aloo is potato. I combined
bits and pieces of various recipes and ended up with this.
Ingredients
For
three:
250
g of fresh spinach
3 tablespoons of ghee or vegetable oil
1/2 teaspoon of cumin seeds
1 teaspoon of mustard seeds
1/4 teaspoon of fenugreek seeds
1.5 onions, chopped
3-4 garlic cloves, chopped
4 cm ginger, finely chopped
2 green chilli, chopped
2 large potatoes, split into 2-3 cm pieces
1 teaspoon ground coriander
1 teaspoon ground jeera
1/2 teaspoons of turmeric
1/4 teaspoon of salt
garam masala, according to taste
Instructions
1. Rinse the spinach and put it in a kettle with boiling water
for three minutes. Pour the water away and leave it aside to
wait.

Heat the ghee / oil in the frying pan. Add the cumin, mustard
and fenugreek seeds. Fry for a moment.

Add onion, garlic, ginger and green chili. Fry for two minutes
all the time stirring.

Add the potatoes. Continue to fry for five minutes stirring
all the time.

Add ground coriander, jeera, turmeric and salt. Mix well.
6.
Add 1 dl of water. Lower the heat and simmer under the lid for
ten minutes.
7.
Add the spinach and cook for another 5 minutes without the lid.
Raise the heat as needed.
8.
Add garam masala according to taste. Mix well and offer with
basmati rice.
