Kerala Chicken
I learned this recipe from an Indian colleague of mine whose
grandparents are from Kerala. To the basic recipe I have added
some tomato, but they can be left out. Or then you can replace
the potatoes with tomatoes - any way you like.
Ingredients
For
two:
1 tbsp coconut oil
2 bay leaves
1 large onion, chopped
1 potato, peeled and chopped
4 green chilies, chopped
2,5 cm ginger, sliced
3 garlic cloves, chopped
curry leaves
2 cm cinnamon, crunched
4 cloves
250 g chicken, chopped into 2-3 cm pieces
200 g coconut milk
salt
1 tomato, cut into 4 pieces
Masala:
2 tsp coriander
1/2 tsp red chili powder
1/2 tsp turmeric
1/2 tsp black pepper
Instructions
1. Prepare the masala by mixing the spices and adding just enough
water to soak.

Heat the coconut oil and fry the bay leaves for a moment.

Add the onions, potatoes, chili, ginger, garlic, curry leaves,
cloves and cinnamon. Stir and fry until the onion is translucent.

Add the masala and fry for another minute.

Add the chicken, stir well and fry for two minutes..
6.
Add the coconut milk and bring to boil.
7.
Lower the heat and add the salt. Let it simmer covered.
8.
Add the tomatoes and stir. If the sauce dries too much you can
add some water. Continue cooking for a couple of more minutes
until the chicken and the potatoes are no longer raw.
9. Serve with rice.
