Fried Prawns
Coconut oil gives a great flavour of Kerala, even when cooking
at home in Finland.
Ingredients
For
two:
2-3 tbsp coconut oil
12 king prawns
1 1/2 onions
4 garlic cloves, crushed
2 dry red chilies
1,5 cm ginger, minced
1 tsp turmeric
1 tsp coriander
1 tsp red chili powder
curry leaves
salt
Instructions
1. Wash the prawns and remove the shell.
2.
Heat the oil and add all the other ingredients except the prawns.
3.
Fry and stir continuously until the onions have a nice golden
brown colour.
4.
Add the prawns and keep on frying. Add a drop of water if needed.
5.
Cover and let it cook for a few minutes. Do not fry longer than
a couple of minutes. Otherwise the prawns will turn rubbery.
6.
Serve with rice.
