Bhindi Do Pyaza


Okra with onions can be cooked in a number of different ways. Below you can find one version.

Ingredients

For two:

2 tbsp oil
4 tbsp oil for frying the okra
250 g okra, chopped into 2-3 cm pieces
1 tsp cumin seeds (jeera)
2 green chilies, chopped
3 garlic cloves, chopped
2 cm ginger, minced
1/2 tsp turmeric
1 big onion, chopped
1 tomato, cut into chunks
1 tsp cumin powder (jeera)
lemon juice (optional)
salt
coriander leaves

Instructions

1. Wash and drain the okras. Remove the stalk ends and cut the rest into 2-3 cm pieces.

2. Heat the oil in a pan and fry the okra for five minutes until softened but not darkened. Lift the okras from the pan.

3. In another pan heat the oil and add the cumin seeds. When they begin to crackle, add ginger, garlic, chili, and turmeric. Fry for a moment stirring constantly.

4. Add the onions. Lower the heat and continue frying.

5. Add the tomatoes.

6. When the onions have turned golden yellow (and the tomatoes have softened), add the okra to the pan.

7. Add salt and cumin powder. Stir and mix well.

8. If you want, you can squeeze some lemon juice. Garnish with fresh coriander leaves and serve.
