Oven Fried Chicken
This is one of my all-time favourite dishes. Chicken is best
as a whole and when it is bought fresh, but also chicken pieces
do well. I often use a plastic frying bag in order not to let
the chicken dry too much.
You can try a number of different spices. Below you can find
some of my favourites (for 1 kg chicken).
a)
Basic Spice Mix
1,5
tsp salt
1 tsp curry (e.g. tikka masala)
2 tsp paprika powder
1/3 tsp white pepper
1/2 tsp tarragon
b)
Tomato Marinade
2
tbsp olive oil
1,5 tsp salt
1 jar of tomato puré (70 g)
1 tbsp lemon
3 garlic gloves (crushed)
2 tsp basil
2 tsp oregano
1/3 tsp ground black pepper
1/2 tsp sugar
1/4 tsp while pepper
Instructions
1. Marinade the chicken for at least
half an hour.
2. Heat the oven to + 220C.
3. Put the chicken in the oven.
4. Let the chicken fry at least for an
hour. If the chicken is very big, let it fry up to 1 1/2 hours
so that the bones will come out easily.)
6. Serve with rice and salad, for instance.
