Okra and Prawns
This is a recipe that I have developed as the original recipe
I saw in a cook book didn't turn out quite the way I liked it.
Ingredients
For
three:
4
tbsp oil
300 g okra, washed, stems removed, and chopped into 3 cm pieces
4 cloves of garlic, minced
4 cm ginger, peeled and grated
6 green chillies, diagonally sliced into 2 or 3 pieces
1 tsp turmeric
10 curry leaves
1 tsp jeera seeds
200 g prawns, shells removed and de-veined
2 tsp brown sugar
1/2 tsp salt
2 tbsp lemon juice
Instructions
1. Heat the oil in a pan. Fry okra for a few minutes until they
are done. Move the okra to a separate plate.
2. Add more oil, if needed, and in the same pan fry garlic,
ginger, chilli, turmeric, cyrry leaves and jeera seeds for two
minutes or so. Add a drop of water if needed.
3. Add the prawns and stir fry for a few minutes until the prawns
are cooked.
4. Add sugar, salt, lemon juice and the pre-cooked okra. Stir
fry for another two minutes.
5. Serve with rice and dal.
