Aubergine and Tomatoes
This is quite a decent vegetarian dish.
Ingredients
For
two:
1 large aubergine
1 tbsp ghee and 2 tbsp oil
1 large onion, chopped
3 garlic cloves, minced
2,5 cm ginger, grated
3 green chillies, chopped
1 tomato, chopped
1 tsp cumin seeds (jeera)
1 tsp fennel seeds
1/2 tsp fenugreek seeds
1/2 tsp onion seeds (kalonji)
1 tsp turmeric
1 tsp coriander powder
1 tsp cumin powder (jeera)
1/2 tsp chilli powder
1/2 tsp salt
1 tomato, cut into four pieces
1/2 tsp garam masala
Instructions
1. Heat the oven into +225 C. Put the aubergine into the oven
for half an hour. Remove and let it cool. Chop into 2-3 cm chunks.

Heat the ghee and oil in a pan. Add the onion and fry 10 minutes
on a medium heat until the colour is golden brown.

Add ginger, garlic, and green chilli and fry for two minutes.

Add the rest of the spices except garam masala. Fry for a minute
or two minutes stirring all the time.

Add the chopped tomato, salt and 1 dl of water. Fry for 5 minutes.

Add the aubergine and mix well. Lower the heat and cover with
lid. Let it simmer for 5 minutes stirring occasionally.
7.
Add the rest of the tomatoes, cover with lid, and simmer for
another 5 minutes.
8. Add garam masala, mix well, and serve with basmati rice.
